A convection oven is equipment with either a single or multiple heating element, the air is then circulated throughout the oven by a single or a number of fans. The method of heat distribution maximises the consistency of temperature and humidity throughout the oven chamber.

Some convection ovens are equipment with a water connection to add humidity to the oven chamber.

Technical Features Explained

Direct Humidification: This facility automatically injects water directly into the cooking chamber via the fan system.  Guarantees consistently successful results for those dishes and products requiring 80% humidity.  A standard feature on all digitally controlled ovens and where the product codes shows ‘UD’

Indirect Humidification: Water is manually injected into the cooking chamber via the fan system by pressing the button on the control panel as required.  This is an easy to use standard feature on ovens showing ‘U’ in the code.

Multi-Function Selector: Simply follow the operating instructions on the dial to select from 8 different cooking functions including grill, lower element and fans only to assist with thawing requirements.  This is a standard feature on the ovens showing ‘M’ in the code

Combination Cooking: With the combination of consistent heat and uniform steam distribution throughout the cooking chamber any type of meal can be produced – especially the most delicate of dishes.  See details of the EKF …………………. Or products with ‘EV’ in the code.

Hygiene: Rounded edges within the cooking chamber and easy to remove side hinged side supports makes these ovens an ideal choice for any establishment where cleanliness is an essential feature of day to day working.

Ventilated Hinged Door: Our ventilation system ensures consistent humidity and even cooking temperatures are maintained throughout the cooking process.  All hinged doors are fitted with a right/left door handle, automatic cut off switch and double tempered glass.

Core Probe: Available for use with most digitally controlled ovens, the core probe ensures that food is produced to precise cooking standards.  Core probe is supplied as standard with the following ovens…..

Digital Command Panel: With easy to use controls, up to 99 cooking programmes can be pre-set or changed within the same cooking phase, enabling busy chefs to produce consistent results each time.
